Doughnut Day

Who doesn't love a good doughnut? I'm mostly a baked doughnut kind of girl but even I can appreciate the creativity that has gone into the doughnut game these past few years.


When I was a girl, I remember that my mom had this black fryer that sat on the counter. I think it was probably similar to a Fry Daddy but I couldn't tell you for sure. I just remember that she would buy biscuits in can, the really small ones that you might use to make monkey bread, cut them, shape, and fry them. Then fresh out of the fryer she would roll them in cinnamon and sugar. They were delicious. Admittedly, I've never made them for my kids, mostly because I almost never fry anything (except for the occasional batch of lumpia) but as we approach Doughnut Day, I thought I'd give them a try.


A little history on Doughnut Day:


Doughnut Day started as a way to honor The Salvation Army Lassies. Lassies were volunteers on the front-lines during WWI. They wanted to bring comfort to the soldiers so they made little "doughboys" or as we now call them, doughnuts or donuts.


My husband's family has a rich history with The Salvation Army. Many of them ministers who have brought comfort to the hurting just like the Lassies to the soldiers. Observing Doughnut Day with these simple doughnuts that my mom made seems to be the best way to bring our stories together.


So, if you want to make some easy doughnuts today in celebration of comfort around the world, here is an easy go-to.


Ingredients:

Canned biscuits

Sugar

Cinnamon

Coconut Sugar

Vegetable Oil (not pictured)


Instructions:

1. Heat the oil in a pan.


2. Mix sugars and cinnamon on a plate.


3. Bust open the biscuits and use a cookie cutter (or your thumb if you don't have one) and punch out the middles. Roll the middles into balls that can also be fried to make doughnut holes.

4. Place the doughnuts in the hot oil. Cook until the bottoms are golden brown. Turn doughnuts to cook opposite side. Doughnut holes need to be rolled around a bit during the cooking process.


5. Once doughnuts are cooked, transfer them to the cinnamon/sugar mix plate and roll them around until they are fully coated.


6. Place them on a paper towel covered plate to cool.


7. Enjoy them while they're warm or cold if you're my pre-teen boy. :)
